Hi friends! I’m presenting to you an original gluten-free mochi Ube, Pandan, Black Sesame, Matcha, and Original mini pancakes! These cute chewy bite-sized pancake cereal are addictive, delicious, fun and easy to make, and so trendy! Picky eaters will love them!
Mini Mochi Pancakes or Mochi Pancake Cereal Recipe

Make chewy and delicious gluten-free bite sized pancake cereal using Mochiko flour (sweet rice flour). You can mix and match your flavors, add milk (of choice) to your bowl of pancake cereal, or add syrup, or just eat them plain! Replace the Mochiko flour with all-purpose flour and you'll get a more traditional pancake cereal. You can quickly make these, and delight and impress anyone!
Ingredients:
Mini Pancake Batter
- 1 egg
- 1 cup Mochiko flour (sweet rice flour) - add more flour if you want thicker pancakes
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1 tbsp cornstarch
- 1 cup milk + 1 tsp yogurt (plain)
- Optional Flavorings:
- Ube extract- a few drops
- Pandan extract- a few drops
- Black Sesame powder- about 1 tbsp
- Matcha powder about 1/2 tsp
- Vanilla extract- a splash

- Mix one egg with the sugar and butter, then add the flour, cornstarch and baking powder. Mix everything together and optionally add a splash of vanilla extract. Add some milk and mix, before adding all the milk and about a teaspoon of plain yogurt.
- Divide the batter, putting about 1/2 cup into each of four bowls. You can choose different flavors of course, but in one bowl, I put a few drops of panda extract. In another I put a few drops of ube extract. I put in about 1/2 tsp of matcha powder in one bowl, and about a scoop of black sesame powder in the fourth bowl. The remaining batter was used to make original flavored cereal pancake.
- Oil a pan and place over low heat. Put the batter into a squeeze bottle (like an old oil or ketchup bottle that’s clean) and squeeze dime-sized circles onto the pan, leaving space between the pancakes. Cook for about 1 -2 minutes and when it looks dryer on top, flip them and cook for about 1-2 minutes again.
- Serve with syrup, honey or milk of choice. I’m thinking of making a miso-cream with miso paste and heavy cream! It would go great with these cute little Mochi cereal pancakes! Any left over batter can be used to make regular-sized pancakes.
